While the calendar says it is officially spring, for some parts of the country. spring doesn’t seem to have sprung just yet. None the less we should already be transitioning our menus for the warmer season and spring environment. Here are a few tips to guide you.

1. Think Iced and Frozen

As we are wrapping up the cold season you should begin to see a change in request for the cooler beverage versus the hot mocha or latte. You may consider adding smoothies and iced versions of some of your hot drinks Like an Iced Mocha or an Iced Vanilla Latte.

2. Think Flavors

When spring comes we think of sunshine, the begin of green grass and spring cleaning…fresh and clean. Look for opportunities to introduce flavored syrups to your menu like, Honey Melon, Mango, Peach, Pomegranate and Mint to your drink offerings. For example you can offer new tea flavors and add a Peach or Mango tea to your menu (a 1/2 ounce of syrup for a 16oz. cup should be sufficient but tweak to your liking). It’s low cost, low waste and has the potential for a high return. Find ways to integrate new flavors into your drink menu.

3. Think Food

When looking at your pastry offerings things like cinnamon rolls, danish and bagels are always pretty good sellers. Take opportunity to introduce fresh plays on favorites. Instead of just a cheese danish add a apple or strawberry into the mix or try a blueberry bagel. In addition, think about new cakes and pies. A wonderful Key Lime or Mango Pie, Tarts, Coconut cake or a Strawberry Shortcake would be fresh tastes to consider. Also try simple items like fruit cups, granola and fruit bars.

For those who do sandwiches and soups think light. Wraps and simple salads are great revenue boosters but you MUST carefully watch your food costs. If not properly executed you can end up losing more than you gain. For spring soups again think light, Minestrone and tomato, Chicken noodle is always a favorite, Gazpacho and/or other vegetable soups.

Finally,

4. Think Decor.

Dress your coffee bar or table for the spring. Bring in some fresh colors, plates, and decor items to give you a nice fresh feel for the season. Putting spring decorations in your pastry case as part of the overall food display is a great draw and don’t forget to garnish your plates with a sprig of mint, a dollop whipped cream or a drizzle of chocolate or caramel.
